Chicken Tagine

Making use of the following ingredients, a slow cooked meal will be ready for you to enjoy for 2 people:

2 free range chicken thighs

2 free range chicken drum sticks

oil for browning

1 onion cut into quarters

2 cloves of garlic - crushed

8 mushrooms - sliced

1 cup red wine

1 sprig fresh thyme

salt and freshly ground black pepper - to taste

Brown the chicken pieces in oil - I use olive oil. Once browned season and remove from the pan. Add the red wine and bring to the boil, and boil for 30 seconds. Add the onions, garlic, mushrooms, chicken and thyme. Cover and allow to cook for at least 40 minutes to ensure the chicken is cooked thoroughly. Serve with brown and wild rice.
